Spring onion with dry small shrimp
Pour a spoon full of oil into a hot pan, add half a cup of dry shrimps and saute for 20 seconds. It should be cooked by now. Now add the spring onion leaves cut into small pieces, salt, green chillies and the freshly grated/desicated/frozen coconut and saute well. Make sure to remove from heat before the leaves change colour. The leaves will lose its Vitamin A as it turns colour. Optional: add a bit of lime juice to get a tangy/freshness to it. Ifg you are adding the lime juice make sure to use it immediately otherwise the leaves will soggy and the thoran will taste not very good.
spring onions are also called shallots in some places. I used the ones which is used for garnishing etc in Asian cooking.
